Why this one

The Cameron Highlands sit at around 1,500m in peninsular Malaysia, cool enough for tea and planted with it since the 1920s. Most of the crop goes into the strong, tannic black tea that Malaysian kopitiams pull into teh tarik — poured between two vessels from a height until it foams.

This is that leaf, bought at the estate rather than the gift shop: a robust broken-leaf black tea that takes condensed milk without disappearing. It brews dark and fast, which is what you want if you are making it the local way.

It also stands up on its own, without milk, if you keep the steep to three minutes. Longer than that and it turns astringent — this is not a delicate tea and it is not pretending to be.

Questions

Do I need condensed milk?

For teh tarik, yes — that is the drink. Evaporated milk plus sugar is the common substitute. It is also perfectly good black, kept to a three-minute steep.

How long does it keep?

About two years in the sealed tin, away from light and heat. Loose leaf holds far better than bags, and the tin is airtight and reusable.
