I grew up on this food, so treat what follows as biased and well-informed in equal measure. Ugandan cooking gets dismissed as bland by people who have eaten one plate of matoke at a hotel buffet. The actual cuisine is built on groundnut sauces, smoked fish, fermented millet and a genuinely enormous range of starches — matoke, cassava, millet bread, sweet potato, posho, rice, all of which turn up on the same plate.
Kampala is one of the great street-food cities and almost nobody says so. The rolex is the famous one, but the grilled tilapia, the muchomo goat, the sim sim balls and the fried grasshoppers in season are all reasons to spend real time in the city rather than transiting through it to the parks.
And the country is small. Kampala to the western parks is a long day’s drive, not a flight, which makes a two-week loop entirely practical.
When to go

Two dry seasons and two wet ones, which is the pattern near the equator. December to February and June to August are the dry windows and the right time for gorilla trekking — the Bwindi trails become genuinely difficult in the rains. April, May, October and November are the heavy months. Temperature barely moves all year; altitude matters more than season, and Kampala sits at 1,200m so it is milder than people expect.

The gorilla permit sits outside all of this and dominates any Uganda budget: $800 per person for a single trek in Bwindi or Mgahinga as of 2026, non-negotiable and set by the wildlife authority. Chimpanzee tracking in Kibale is $250 and, honestly, nearly as good a wildlife day for a third of the cost. Everything else in Uganda is inexpensive.
What to eat
Chapati rolled around an omelette with cabbage, tomato and onion. Breakfast, lunch or 2am. Ask for a double if you are hungry. Nothing to do with watches.
Chicken, beef or groundnut stew steamed inside a banana leaf parcel. A special-occasion dish and the best thing in Ugandan cooking. Order it a day ahead where you can.
Grilled goat or beef on skewers, roadside, with kachumbari salad. The strip on the way out of Kampala towards Masaka is the classic.
Whole, deep-fried or grilled, with posho or chips. Ggaba landing site or Munyonyo. Eat it lakeside the day it is caught.
Matoke cooked together with beans, offal or groundnut sauce in one pot. The standard Ugandan breakfast and deeply comforting.
Grasshoppers, fried with onion and chilli, available around November and April. Genuinely delicious and the thing visitors are most reluctant to try.

A route that works
Kampala: arrive, eat a rolex
Entebbe airport is an hour from the city. Do nothing on day one except find a rolex stand and a Nile Special.
Kampala: downtown and markets
Owino market and the Old Taxi Park are overwhelming in the best way. Nakasero market for produce. Go with someone if it is your first time.
Kampala: Kasubi tombs and the lake
Royal Buganda tombs in the morning, then Ggaba landing site for tilapia in the afternoon.
Bus to Jinja
Two hours east. Source of the Nile boat trip at sunset, which is worth the cliché.
Jinja: rafting or kayaking
Grade five rapids if you want them, a gentler float if you do not. Both operators are long-established.
Long drive west to Fort Portal
A full day, roughly seven hours. Break it at the equator marker for the novelty and lunch in Mbarara.
Kibale: chimpanzee tracking
Early morning permit, three to four hours in the forest. Better value than gorillas and nearly as extraordinary.
Crater lakes and tea
Cycle or walk between the crater lakes around Nkuruba. Tea estate visit in the afternoon.
Queen Elizabeth NP
Drive south. Afternoon game drive in the Kasenyi sector.
Kazinga Channel boat
The best wildlife hours in Uganda — hippo, elephant and enormous birdlife on a two-hour boat.
Ishasha to Bwindi
Tree-climbing lions in the Ishasha sector on the way south, then up into the forest.
Bwindi: gorilla trek
A 6am briefing and anywhere from one to six hours of walking. Hire a porter — it is $20 and it employs someone locally.
Bwindi: village walk or recovery
The Batwa cultural experiences vary a great deal in quality; ask your lodge which one is community-run.
Long drive back to Kampala or fly out
Nine hours by road, or a light aircraft from Kihihi if the budget allows.

Where your time is better spent
The Entebbe hotel strip. Uganda’s international arrivals default to it and it tells you nothing — get to Kampala or straight to Jinja.
Skip Murchison Falls if you are already doing Queen Elizabeth and Bwindi, unless you have three spare days; it is a long way north and the drive eats the value. And be sceptical of any "orphanage visit" offered as a tour — the practice is widely criticised and often exploitative.

Shilling prices run into thousands. Bitaano is 500 and nkumi tano is 5,000, so listen for whether a trader says hundreds or thousands.
The four I get asked most
Is the gorilla permit worth $800?
For an hour with a habituated family, once in a lifetime — most people say yes and mean it. If the budget does not stretch, Kibale chimpanzee tracking at $250 is a genuinely comparable forest experience, and Uganda is the best country in Africa for it.
Is Uganda safe for travellers?
Kampala is comparable to other large East African cities: petty theft in crowds, avoid walking with valuables at night. The main practical risks are road traffic and malaria, in that order. Check current advice for the far north-east and the DRC border areas.
Can you travel Uganda without a driver?
Yes. Buses and shared taxis (matatus) reach everywhere and are cheap, though slow and crowded. For the western parks a hired car with driver, roughly $80–120 a day including fuel, saves enough time to be worth it.
What is the food actually like?
Starch-heavy, sauce-driven and much better than its reputation. Groundnut sauce, luwombo and smoked fish are the dishes to judge it on. Kampala street food is the highlight and the cheapest part of the trip.
